These super moist chocolate cupcakes with rich buttercream icing are so delicious and are the perfect thing to wow everyone at your Go Blue for Autism fundraiser.

Makes: 12 cupcakes
¾ cup (95g) plain flour
½ cup (45g) unsweetened cocoa powder
½ cup (100g) granulated sugar
½ cup (100g) brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 eggs (room temperature)
1/3 cup (80ml) vegetable or canola oil
2 teaspoons vanilla extract
½ cup (120ml) buttermilk (room temperature)
Blue Buttercream Icing:
1 cup (230g) unsalted butter (room temperature)
5 cups (600g) icing sugar
1 teaspoon vanilla extract
Pinch of salt
1-3 drops blue food colouring
Preheat the oven to 170oC and line 12-cup tin with blue cupcake liners.
Add flour, cocoa powder, sugar, baking powder, baking soda and salt to a large bowl and stir until combined. Make a well in the middle and add in eggs, oil, vanilla extract, and buttermilk. Stir together until combined, ensuring not to overmix. The mixture will be thin. Pour into the cupcake liners until each is halfway full.
Once the oven has warmed to temperature add the cupcakes and bake for 12-18 minutes or until a toothpick comes out clean. Remove from oven and leave to rest until fully cooled, then ice.
Beat butter with an electric beater until creamy. Add vanilla extract and stir in icing sugar before beating together on low for 30 seconds and then increasing to high for about a minute. Add a pinch of salt and beat for 30 seconds on high. Spoon the icing mixture into a piping bag fitted with your desired nozzle and set aside. Once cupcakes have cooled completely slowly pipe onto them and decorate how you wish.
